Pineapple and Tofu Fried Rice. Yummy.
Brown rice cooked with snow peas, water chestnuts, bamboo shoots, celery and onion. Combine with pineapple and Sriracha/Soy Sauce marinated tofu. Serve in pineapple bowl and top with some fresh green onions. Sweet and spicy perfection.

Beautiful way to spend Memorial Day weekend. We’ve been on 3 different hiking trails so far and I’m loving it.
Getting ready to go hike in Sedona tomorrow! I bring the emergency blanket whenever the opportunity rises. Also pictured: digi cam, Barbara’s multigrain cereal bar, applesauce on the go, pocket knife and flashlight.
It’s been a pretty relaxing past couples days. I got to leave work early on Friday as a reward from my boss and celebrated by getting my first pedicure in maybe 7 years. Um, so much fun. Why did no one tell me this?
It’s crazy to see people regularly splurge on manis and pedis and I’m glad I haven’t because it made the experience a huge luxury. Orange slices in the foot bath? A massage chair? A water bottle that was chilled just for me? A hot stone massage? And you’re only charging my $23? Awesome.
Memorial day plans: none yet! I’m researching different day hikes we can go for tomorrow but not having plans at all is okay by me and a welcome change of pace.
So excited for great weather and getting to be outdoors. What are your plans this weekend??

Who has exciting Memorial Day weekend plans?
I’m back at it. Logging what I eat, that is. I’ve been keeping track of my daily intake - water, vitamins, food, as well as exercise and sleep schedule, etc.
Accountability is huge for me. To be honest, it’s been a while since I’ve actually been proud of my intake for the day.
Yay! Our tomatoes are ripening. We planted bell peppers, tomatoes, eggplants, chives, basil, oregano and other spices. This feels like organic gardening.
We had to get creative with the process on account of the concrete patio and bugs are definitely getting in the way. More on this later!
This is my Monday night. Bikram was amaaaazing tonight. I’ve convinced my boyfriend to come too, so he is also reaping the benefits of 90 minutes of torture.
Feeling empowered, proud of myself and energized. And also, super excited that I won’t be at work next Monday. Hooray!
